Spring sips

Just in time for spring, we’re taking a fresh look at some of the delicious drinks on the shelves here at Co-op, and have shaken up four fabulous cocktails to help you welcome the season

Ginger & lemon iced tea (V) (GF)

You can prepare this beforehand — simply add ice to serve

Serves 4 • Ready in 10 mins, plus cooling  

Peel and finely chop 75g ginger, then put in a large jug, along with 2 tbsp Co-op clear honey and the juice of 1 lemon. Pour over 1 litre boiling water, add 2 Co-op 99 blend Fairtrade tea bags and stir for 30 seconds to 1 minute, depending how strong you like your tea. Remove the tea bags and leave to cool fully. Strain the cooled liquid, discarding the ginger. To serve, pour into tall glasses, add ice cubes and garnish with a slice of ginger and a rosemary or thyme sprig each.

Bank holiday bramble (VG) (GF)

The berries pair well with the gin here, as well as adding colour — give it a go!

Serves 2 • Ready in 10 mins, plus cooling  

In a small pan, gently heat 50g Fairtrade caster sugar with 100ml water, stirring until fully dissolved. Add 4 blackberries and bring to the boil. Cook until the mixture has reduced by about half. Remove from the heat and leave to cool fully. Strain the cooled liquid between two glasses filled with ice, then add 30ml Co-op Irresistible London dry gin to each. Stir to mix and garnish with a slice of lemon and a blackberry each to serve.

Elderflower fizz (VG) (GF)

A delicate cocktail to kick off your Easter celebrations in style!

Serves 2 • Ready in 10 mins 

Start with a garnish: peel two long, thin strips of zest, avoiding the white pith, from 1 orange and twist, then set aside. Divide 100ml Co-op Irresistible sparkling elderflower pressé between two Champagne flutes, followed by 200ml Co-op Irresistible prosecco. Garnish with basil leaves and the orange twists to serve.

Honeyed citrus & thyme vodka soda (V) (GF)

If you don’t have a cocktail shaker, use a jam jar with a lid

Serves 2 • Ready in 10 mins, plus cooling  

Mix 2 tbsp Co-op clear honey and 2 tbsp boiling water until fully dissolved, then allow to cool. Squeeze the juice of ½ lemon and ½ lime into a cocktail shaker. Add the honey mixture, 75ml Co-op Irresistible French grain vodka, 1 large thyme sprig and ice cubes, then shake vigorously. Strain into two glasses before topping up with 150ml Co op soda water. Garnish with thyme sprigs and lemon and lime slices.
