Coronation chicken skewers

Get ready for a right royal treat!

Makes 8 skewers • Ready in 20 mins, plus marinating

  • 200g Co-op 0% fat Greek style natural yogurt 
  • Juice of ½ lemon
  • 2 tbsp mild curry powder 
  • 1 tbsp chopped coriander, plus extra to garnish 
  • 600g pack Co-op British chicken breast fillets, cut into 1cm strips 
  • 3 tbsp lighter than light mayonnaise 
  • 2 tbsp Co-op mango chutney 
  • 100g Co-op mixed leaf salad 
  • ¼ cucumber, chopped 
  • ½ red pepper, diced 
  • 2 spring onions, thinly sliced 
  • You will also need 8 wooden skewers, soaked in cold water 
  1. In a large bowl, mix 100g of the yogurt, the lemon juice, 1½ tbsp of the curry powder and the chopped coriander. Season, then add the chicken and toss to coat. Leave to marinate for at least 20 mins. 
  2. Preheat the grill to high. Stir together the remaining yogurt and curry powder, the mayo and mango chutney to make a dip, then spoon into a jar and chill until needed. 
  3. Thread the chicken onto the skewers and spread out on a grill pan. Cook for 6-8 mins, turning halfway, or until cooked through. 
  4. Toss together the mixed leaves, cucumber and red pepper. Serve the skewers scattered with the spring onion and extra coriander, with the salad and dip on the side.

Cheese & potato quick pasties

With a creamy veg filling, these are fantastic hot or cold

Makes 8 • Ready in 30 mins

  • 150g Co-op light soft cheese 
  • 2 tbsp Co-op semi-skimmed milk 
  • 50g Co-op British lighter grated mature cheese 
  • 540g can Co-op Honest Value new potatoes in water, drained and sliced 
  • 1 spring onion, sliced 
  • 400g can Co-op cut green beans in water, drained and rinsed
  • 100g Co-op frozen British garden peas, defrosted in the microwave 
  • 8 Co-op plain tortilla wraps 
  • 1 Co-op British free range egg, beaten 
  1. Preheat the oven to 200°C/fan 180°C/gas 6. Line two large baking trays with greaseproof paper. In a large bowl, mix the soft cheese and milk until smooth. Season, then stir in the cheese, potatoes, spring onion, green beans and peas. 
  2. For each pasty, lay a wrap on the baking tray and brush around the edge with egg. Put some of the potato mixture onto one half, then fold the other half over. Working from one side to the other, tuck the top edge under the bottom one and press together. Repeat with the rest of the wraps and filling. 
  3. Brush the tops with a little of the remaining egg, then bake for 12-15 mins, until golden and crisp. Allow to cool for 5 mins if serving warm, or cool completely before packing.

Beef Wellington puffs 

You can‘t go wrong with a British beef and horseradish combo

Makes 8 • Ready in 30 mins

  • 300g puff pastry 
  • Flour, for dusting
  • 1 Co-op British free range egg, beaten 
  • 4 tbsp Co-op Irresistible tomato and chilli chutney
  • 100g pack Co-op Irresistible sliced roast beef topside 
  • 2 tbsp Co-op hot horseradish sauce 
  • 2 tbsp Co-op 0% fat Greek style natural yogurt 
  • 40g Co-op wild rocket 
  • 30g radishes, thinly sliced 
  1. Preheat the oven to 200°C/fan 180°C/gas 6. Line two baking trays with greaseproof paper. Roll out the pastry on a floured surface to a thickness of about ½cm. Cut into eight 8cm squares and prick the centres with a fork. 
  2. Lift the pastry squares onto the baking trays, leaving a little space between them. Brush all over with the egg, then spoon a little tomato and chilli chutney into the centre of each square. Bake for 12-15 mins, until golden and cooked through. Leave to cool for 5 mins. 
  3. Cut each slice of beef in half and arrange on top of the squares. Mix the horseradish and yogurt, season, then dollop onto the beef. Top with a little rocket and slices of radish to serve.

Red, white & blue trifles 

If you‘re planning a Jubilee party, fly the flag with this fun and simple dessert

Serves 4 • Ready in 20 mins, plus setting

  • 135g pack raspberry jelly, torn into cubes 
  • 100ml summer cup
  • 100g Co-op blueberries
  • 125g Co-op raspberries
  • 5g mint, shredded, plus extra leaves to garnish 
  • 100ml Co-op double cream
  • 100ml Co-op 0% fat Greek style natural yogurt 
  • 150g madeira cake, cut into cubes 
  • 1 Co-op Irresistible meringue nest, crumbled 
  1. Make up the jelly according to the pack instructions, replacing 50ml of the cold water with 50ml of the summer cup. Divide between four clean jars or serving glasses and chill in the fridge for 4 hours, or until set. 
  2. Put the berries, mint and remaining summer cup in a bowl and leave to marinate, stirring occasionally. Whip the cream to stiff peaks, then stir in the yogurt until smooth. 
  3. To assemble the trifles, put a few cubes of cake on top of each jelly, then spoon over the marinated berries and juices. Top with a couple of spoonfuls of the cream. If serving immediately, crumble over the meringue and garnish with the extra mint. If packing for a picnic, put the meringue and mint in a separate container and top the trifles just before serving.
