FEEDS 2 PREP 15 MINS COOK 45 MINS

Baked croissant French toast (v)

Make time for Mum by sharing these zesty, custardy croissants. They don’t take long to make, and taste so good.

  •  2 Co-op croissants, quartered
  •  275ml Co-op semi-skimmed milk
  •  2 Co-op British eggs
  •  25g caster sugar
  •  ¼ tsp ground cinnamon
  •  Zest of ½ orange
  •  5g Co-op Fairtrade dark chocolate, grated
  •  200g Co-op frozen mixed berries
  •  ½ tbsp Co-op clear honey
  •  1 tbsp fresh orange juice
  1. Preheat the oven to 170°C/fan 140°C/Gas 3. Arrange the croissants in a medium baking dish. 
  2. Beat the milk, eggs, sugar, ground cinnamon and half the orange zest in a jug. Pour over the croissants, then sprinkle over the grated chocolate. Bake for 45 mins, until golden.
  3. At the end of cooking, gently heat the berries, honey, remaining zest and orange juice in a pan for 5 mins, stirring regularly. Drain any excess liquid and serve with the croissants.

FEEDS 2 READY IN 20 MINS

California style eggs (v)

Forget ordinary poached eggs – this American version is bang on trend and totally delicious.

  • 2 Co-op British eggs
  • 2 Co-op ripe and ready to eat avocados, skinned and stoned
  • 100g Co-op cherry tomatoes, chopped
  • ½ red chilli, deseeded and finely chopped
  • Juice of 2 lemons
  • Freshly ground black pepper
  • 2 tsp Co-op olive oil
  • 2 pinches paprika
  • 2 bagels of your choice
  • Large handful rocket leaves 
  1. Bring a small pan of water to the boil and turn down to a very low simmer. Gently break in the eggs. Cook for 2 mins until the whites are cooked through and the yolk is still soft. Carefully remove with a slotted spoon and drain on kitchen paper.
  2. Meanwhile, mash the avocado in a bowl and stir in the tomatoes, chilli and juice of half a lemon. Season with freshly ground black pepper.
  3. Whisk the oil, one pinch of the paprika and the remaining lemon juice together to make a dressing.
  4. Halve the bagels and toast. Top 2 halves with the rocket, avocado mix and poached eggs. Pour over the dressing and sprinkle over the remaining paprika, then top with the remaining bagel halves.

MAKES 8 SLICES PREP 20 MINS COOK 1 HOUR

Breakfast banana bread (v)

This makes a lovely change from cereal for breakfast, and is delicious any time of the day.

  • 2 tbsp vegetable oil, plus extra for greasing
  • 75g Co-op fat free Greek style yogurt
  • 3½ tbsp Co-op clear honey
  • 50g light brown soft sugar
  • 1 tsp vanilla extract
  • 2 Co-op British eggs
  • 2 Co-op Fairtrade bananas, mashed, plus ½ banana, sliced
  • 50g walnuts, chopped, plus 5 halves reserved
  • 50g raisins
  • 75g Co-op porridge oats
  • 150g Co-op self raising flour
  1. Preheat the oven to180°C/fan 160°C/Gas 4. Grease and line a 900g loaf tin with greaseproof paper.
  2. Whisk the oil, yogurt, honey, sugar, vanilla extract and eggs together, then stir in the mashed bananas. Add the walnuts, raisins, oats and flour and beat together with a wooden spoon.
  3. Pour into the loaf tin and top with the banana slices and reserved walnut halves. Cook for 1 hour or until a skewer inserted into the middle of the loaf comes out clean. 
  4. Remove from the oven. Cool on a wire rack for 10 mins before turning out and allowing to cool fully.

Irresistible British roast beef

Tender British beef served with roasted vegetables is so easy to cook but tastes really special.

  • 2 carrots, peeled
  • 1 parsnip, peeled
  • 1 onion, cut into wedges
  • 8 sprigs fresh thyme, or ½ tsp dried
  • 1 tbsp vegetable oil
  • Freshly ground black pepper
  • 1 tsp English mustard
  • 1kg Co-op Irresistible Hereford beef roasting joint
  1. Preheat the oven to 200°C/fan180°C/Gas 6. Chop the carrots and parsnip into batons and put in a roasting tin with the onion, 6 sprigs of thyme and the oil. Toss together and season with black pepper. 
  2. Remove the leaves from the rest of the thyme and mix with the mustard. Rub over the beef and place it on top of the veg. Cook in the oven for 20 mins, then turn the oven down to 180°C/fan 160°C/Gas 4 and cook for 30 mins more. This will give you medium rare beef. If you like it well done, cook for a further 30 mins. 
  3. Remove the beef and veg from the oven, cover and leave to rest for 25 mins. Season with more pepper and serve with your favourite sides.

This great british roast will make your mother’s day


FEEDS 4 READY IN 10 MINS

Red wine gravy

There’s plenty of this rich gravy for everyone.

Scrape the juices and scraps from the bottom of the beef roasting tin into a small pan. Add 1 tbsp vegetable oil and heat for 1 minute before stirring in 1½ tbsp Co-op plain flour. Cook for 1 minute more, then add 100ml red wine. Cook, stirring, for 2 mins until thickened. Add in 350ml beef stock, stirring until you have the right consistency. When needed, reheat by simmering the gravy for 3 mins.

Yorkshire puddings (v)

This roast dinner classic is crisp on the outside, fluffy on the inside and ideal for mopping up gravy.

Preheat the oven to 220°C/fan 200°C/Gas 7. Pour 4 tsp vegetable oil equally into the 4 holes of a Yorkshire pudding tin and put in the oven for 5 mins. Meanwhile, put 60g Co-op plain flour into a bowl. Make a well in the centre and break 2 Co-op British eggs into it. Whisk, incorporating the flour a little at a time. When it becomes too stiff to carry on, gradually add 100ml Co-op semi-skimmed milk. Keep whisking and pouring until you have a smooth batter. Season with freshly ground black pepper, pour the batter evenly into the holes of the hot tin and cook in the oven for 15-20 mins, until golden and crisp.

Horseradish spring greens

Serve these inside your Yorkshire puddings if you fancy.

Trim and slice 400g spring greens. Cover the bottom of a pan with water and heat until simmering. Add the greens, put the lid on and steam over a medium heat for 5 mins until just tender. Whisk together 2 tsp Co-op horseradish sauce, 1 tbsp lemon juice and 100g fat free Greek style yogurt. Serve the greens with the horseradish dressing.

Cauliflower & Stilton gratin (v)

If you prefer broccoli, it will work just as well in this creamy and crunchy side dish.

  • 1 cauliflower, cut into small florets 
  • 30g Co-op unsalted butter
  • 4 sprigs fresh thyme, or ½ tsp dried
  • 30g Co-op plain flour
  • 100ml Co-op semi-skimmed milk
  • 200ml vegetable stock
  • 20g Co-op Irresistible Somerset vintage Cheddar, finely grated
  • 100g Co-op Irresistible Stilton
  • 15g fresh breadcrumbs
  1. Preheat the oven to 180°C/fan 160°C/Gas 4. Bring a pan of water to the boil and cook the cauliflower for 3-4 mins, until just tender. Drain and scatter in a medium baking dish.
  2. Heat the butter and thyme in the pan until melted, then stir in the flour and cook for 1 minute. Remove from the heat and gradually add in the milk and vegetable stock until you have a smooth liquid. 
  3. Put the pan back onto the heat and stir until boiling. Turn down to a simmer and cook for 2 mins until thickened. Stir in the Cheddar and three quarters of the Stilton.
  4. Remove from the heat and pour over the cauliflower in the baking dish. Sprinkle over the remaining Stilton and the breadcrumbs. Cook in the oven for 25 mins until golden.
